Game Feasting at Gymkhana
With the traditional shooting season now well underway, there is no better time to enjoy the furred and feathered specialities that herald the start of autumn in the UK.
Executive Chef Sid Ahuja has created a limited-edition Hunters’ Menu that pairs Britain’s revered grouse and venison with the classic and contemporary Indian cuisine for which our Michelin-starred Mayfair restaurant is renowned for.
Traditionally, hunting was a popular sport with the Indian aristocracy, with deer, quail, boar and mallard amongst the species shot. Consequently, in devising this exclusive menu for London, Sid is able to draw on a legacy of authentic game recipes from regions including Rajasthan, Hyderabad, Awadh and Bengal.
The rich, robust taste of grouse makes it a perfect contender for tikki, where it’s minced and formed into patties, served on a pao bun and accompanied by a peanut ghati masala.
Connoisseurs will note two different types of venison are included in the menu: Tandoori Masala Venison Boti Kebab which is complemented with Kashmiri Walnut Chutney and Mooli, while Gymkhana’s signature pastry-topped Muntjac biryani with pomegranate and mint raita adds a sweetened twist to the savoury part of the meal.
However, there’s more to this limited-edition menu than the opportunity to serve seasonal British game at Gymkhana. Indian spices naturally draw out the best of game meats, says Sid, making them taste richer and more complex. The long, slow cooking of masalas and biryani tenderise the flesh while intensifying the flavour.
With Pappadums, Shrimp Sorpotel and Nimbu Achaari Raita to start, plus a luxurious choice of Kulfi or Kheer to finish, Gymkhana’s Hunters’ Menu is a way to toast the new season, mark a special occasion, or treat the gourmet in your life.
The six-course Game Feast runs from Tuesday 7th September until the middle of February and is priced at £90 per person with the option to include wine pairing at an additional £75 each.
